    Shortbread Pan

A friend gave me the Thistle pan probably 20 years ago and I LOVE IT. I love the ease of the recipe and how delicious the finished product is. I just purchased a pan like mine to give to a friend who is starting to bake a little. When I told her how simple it is to make and how everyone I've ever given it to loves it, she can't wait to christen it. I used to make (2 batches) red s'bread for Valentine's Day and green for St Patrick's Day and my co-workers finished it off every time. I don't even knead the dough, just mix it in the bowl and pat it into the pan.
